Good morning!
Hope everyone is doing as good as the current situation allows us to be. Since everyone is now trying new recipes, innovating and having more adventures in the kitchen, maybe you can give this recipe a try. Its really easy and so good!
Ingredients
- 1 cup granulated sugar (200 g)
- 1 cup brown sugar (200 g), lightly packed
- 3 eggs room temperature
- 3/4 cup cocoa powder (75 g)
- 1 cup flour (120 g)
- 1 teaspoon salt (6 g)
- 1.5 cup dark chocolate chips (260 g)
- 1 cup melted butter (225 g), unsalted
- 1 tbsp coffee (15 mL, optional)
- 1 tbsp vanilla extract (15 mL)
- Extra: m&m’s and nuts
Directions
1. Preheat the oven to 180 C/350 F and prepare a 8 x 8″ baking pan with parchment paper.
2. In a large bowl, combine melted butter, eggs, vanilla extract, and coffee then mix together well.
3. Add the white and brown sugars to the mixture and whisk together well.
4. Sift cocoa powder, flour, and salt into the bowl and mix until just combined. Do not skip the sifting, cocoa powder is very lumpy and you don’t want your brownie to have lumps of just dry cocoa. 
5. Toss in chocolate chips (or chunks, make sure they are not too big) and fold into the batter.
6. Add batter to pan and smooth to the edges. You can add more toasted nuts, chocolate chips to the top or m&m’s before baking if desired.
7. Bake for about 30 min or until the center is just set. You’ll notice the center does not wiggle when the pan is moved. Don’t over-bake your brownies. Unlike other cakes, brownies will not have springy center and a skewer inserted into the center will not come out clean. Your brownies are done when the center is set and you see the top just begin to crack.
For serving, add ice cream or strawberries to your brownies for an even better dessert. Hope you try it and enjoy it!
