Egg less chocolate chip cupcakes

Hello!!

I’m back with another recipe (took a break last week)! After being out for a week, I did not do any grocery shopping and I was not wanting to go anyway, so I had to use just what I had at home. I started doing some research and adjust it to my ingredients. I didn’t have any eggs (that’s why the title), butter, yogurt or any fruit. This is what came out.

  • 1 and 3/4 cups all-purpose flour
  • 1 cup white sugar
  • 1 tsp baking Soda
  • 1/2 tsp salt
  • 1 cup of milk (soy, almond or just regular milk)
  • 2 tsp of vanilla extract
  • 1/3 cup Olive oil 
  • 1 Tbsp white vinegar
  • 1/2 cup chocolate chips (probably a little bit more so you can put some on top before baking, because all of mine are hidden inside haha)

Directions

  1. Pre heat oven at 350 F or 180 C. Line up a 12 cupcake tin with paper liners and set aside.
  2. Mix flour, sugar, salt and baking soda in a medium bowl.DSC_0308_edited
  3. Add milk, vanilla, oil and vinegar and mix well.DSC_0309DSC_0313
  4. At last, incorporate chocolate chips.
  5. Distribute the batter in twelve liners (remember to put 3 or 4 chocolate chips on the very top before baking so you can guess from the beginning what kind of cupcake it is) and bake for 20-22 minutes (check them at 20).DSC_0314
  6. When done, leave them in the baking pan for a couple of minutes before transferring them to a cooling rack.
  7. Enjoy!

If you would like, you can skip the chocolate chips and just have a vanilla egg less cupcake and top them with your  favorite icing or decoration!

Remember that bakery products are for occasional intake only. Try to include fruits and vegetables in your daily diet, be active and stay hydrated.
