Hello! Happy beginning of the month people. Hope it will be a month full of joy, peace and great moments.
Do you guys like cinnamon rolls? Well, I do. I love them. That is the reason why this is the second recipe with it (The first one was the cinnamon roll pancakes previously posted on the blog https://chiaconlimon.com/2018/03/23/cinnamon-roll-pancakes/) It’s pretty simple and a big plus is that your kitchen will be smelling like cinnamon. Apart from a great taste and smell, these muffins have a crunchy texture that will make you want to eat more than just one. I got 12 muffins (cupcake pan size) but if you use a regular muffin pan you might get 10.
Ingredients for muffins
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup granulated white sugar
- 1 egg
- 1 cup milk (I used skimmed milk, but whole or partially skimmed will work perfectly)
- 1 tablespoon Greek yogurt
- 1/4 cup melted butter
- 1 teaspoon vanilla extract
Ingredients for the filling and streusel top
- 1 cup brown sugar
- 3 teaspoons cinnamon powder
- 1/4 cup cut butter (in small pieces at room temperature *NOT MELTED and not too soft)
- 3/4 cup chopped walnuts (no need to make them super small, I basically just break them apart with my hands in bigger pieces for a more crunchy effect)
- 2 tablespoons all-purpose flour
Directions
- Pre-heat oven to 200 Celsius degrees. Prepare your muffin tin by greasing it or line paper baking cups.
- In a bowl mix together all the dry ingredients for the muffins (flour, baking powder, salt and sugar).
- In another bowl whisk the egg, milk, yogurt, melted butter and vanilla extract. Whisk together till everything is combined.
- In a medium bowl, mix together brown sugar, cinnamon powder, butter and chopped walnuts for the filling.

- Add the wet ingredients to the dry ingredients and mix till just combined (don’t over mix). Gently fold in half the filling mixture.

- Fill each muffin cup to about 3/4th with the batter.

- Add flour (2 tbsp) to the remaining filling and mix until it looks like crumbs. Sprinkle each muffin with a teaspoon (a little more maybe) with this mixture.

- Bake for 15-20 minutes (I baked mine 16 mins) till a toothpick inserted in the center of the muffin comes out clean.
- Once baked, remove the muffins and place them on a cooling rack to cool.

- Eat them!
