Fluffly pancakes

Hellooo!

Back at it again and with another recipe for delicious pancakes. This time is extra fluffy and perfect for your special breakfast or brunch (or just if you feel like eating them for whatever reason, which is my case all the time haha).

Here is what we need:

Ingredients

  • 1 1/4 cups of  milk
  • 2 eggs
  • 2 tablespoons vegetable oil
  • 2 cups all-purpose flour
  • 1 tablespoon granulated sugar*
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt

Directions

  1. In a medium bowl, mix dry ingredients.DSC_0719
  2. In a large bowl beat (with an electric beater or just by hand) milk, eggs and oil until well mixed. Then add the dry ingredients and mix by hand.
  3. incorporate well, don’t worry if the batter looks kind of lumpy, it’s OK.

  4. Leave the batter rest for a couple of minutes (3 or 4) before cooking.
  5. Pour the batter in a hot greased surface and cook until golden on both sides. I used a 1/3  measure cup for my pancakes and got 7, so if you want them smaller you will have a higher yield.DSC_0496 1
  6. Serve and enjoy!

Super easy and fast recipe, great for preparing it with the family and combine it with some fruits, syrup or nuts. But If you want something else like bacon, ham or stuff like that will go amazingly good also! Be creative!

*Sugar is optional, if yo want to add syrup or honey at the end, I would suggest to skip the sugar (they will taste great, trust me) but it is totally up to you.
