Good morning!
Have been gone for a while, but there is a great recipe today that I made with Elsy from the Block. Its a healthier kind of recipe, using whole wheat flour (can be perfectly done with regular or any other kind of flour), honey and applesauce. Hope you like it and try it sometime.
Ingredients
- 2 cups grated zucchini (packed and not squeezed)
- 1 large egg
- 1/2 cup unsweetened applesauce
- 3/4 cup raw honey
- 1 tsp vanilla extract
- 2 tsp cinnamon
- 1 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 2 cups whole wheat flour (or regular flour)
Directions
- Preheat oven to 350 F / 180 C.
- In a large mixing bowl, add egg, applesauce, honey, vanilla, cinnamon, baking soda, baking powder and salt.
- Whisk together until well combined.
- Add zucchini and stir. Add flour and mix gently with a spatula just enough to combine.



- Pour batter into a baking pan and bake for 50 or 60 min or until a toothpick inserted comes out clean.

- Remove from oven and transfer to a cooling rack to cool off. This is a moist bread, because of of the water in the zucchini, so sometimes it might take longer to bake, but at the end it will be kind of moist. just make sure its completely cooked 🙂
