As a really big fan of pancakes for breakfast (and in every other meal of the day) I wanted something sweet and easy. This recipe makes reference to a previous post called “Fluffy pancakes” but with a little twist.
Ingredients
- 1 1/4 cups of milk
- 2 eggs
- 2 tablespoons vegetable oil
- 2 cups all-purpose flour (or any other kind will work absolutely fine)
- 1 tablespoon granulated sugar
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1/3 cup chocolate chips or chocolate chunks (as you prefer)
Directions
- In a medium bowl, mix dry ingredients.

- In a large bowl beat mix by hand: milk, eggs and oil until well mixed. Then add the dry ingredients.
- Add chocolate chips and incorporate, don’t worry if the batter looks kind of lumpy, it’s OK. Do not over mix or you will not have the fluffiness your are hoping for.



- Leave the batter rest for a couple of minutes (3 or 4) before cooking.
- Pour the batter in a hot greased surface and cook until golden on both sides. I used a 1/3 measure cup for my pancakes and got 9, so if you want them smaller you will have a higher yield.

- Serve and enjoy! I just topped them with some more chocolate chips and a little bit of honey, but you can combine fruits, syrup, seeds or just eat them warm by themselves. Hope you try them!
