Banana carrot dates Cake ft. Elsy from the block

Morning morning!! 

Maybe the title of this post might make you think this recipe is complicated because of too many ingredients, but happens to be its not. It’s very easy and all the work is worth it! trust me. The cake doesn’t have any added sugar and its gluten free. The sweetness in this cake comes from the ripe bananas and dates. You can totally switch the chickpeas flour for any other kind, or add more ground nuts or even some raisins.

I usually don’t make very healthy desserts (just a few times) but happens to be that this week was the birthday of a very special person, she is a great friend of mine, an amazing woman and human being. Her name is Elsy  (or as I call her “Elsy from the block“) and she is from Mexico, and almost forget to mention, the fittest human I know hahahaha. We made this recipe together so apart from being a very easy recipe, if you have a crazy friend you want to spend more time with, baking this cake could be a good idea. It was all team work!! Hopefully she wont kill me for naming this post like this haha

Since it was for her birthday, we tried to find ingredients that went good together and that we didn’t need to add any sugar. The frosting in this cake has some icing sugar but frosting is completely optional. It is true that the sweet and salty flavor of the cream cheese frosting acts like a complement to the cake, but is not a rule. Also, we did not add that much icing as in conventional carrot cakes, where you usually see a very thick layer  of icing. We just added a bit and spread it on top to make it nicer.

Ingredients

  • 3 large eggs
  • 2 ripe bananas
  • 50 g dates
  • 75 g olive oil
  • 50 g ground nuts
  • 180 g chickpeas flour
  • 2 tsp baking powder
  • 3 tsp cinnamon
  • 1 tsp nutmeg
  • 50 g rolled oats
  • 300 g shredded carrots
  • 1/4 cup almond milk (approx.)

For the frosting: icing sugar, cream cheese and vanilla extract.

Directions

  1. Pre heat oven to 180 C.
  2. Peel and shred carrots.
  3. Whisk eggs in a large bowl and set aside.
  4. Blend bananas, dates and oil until smooth.IMG_5709
  5. Sift flour, baking powder, cinnamon and nutmeg together. Add rolled oats.IMG_5711
  6. Mix eggs and banana mixture, then add carrots and ground nuts.
  7. Add dry ingredients in two parts to the eggs mixture. Use a spatula to incorporate everything but do not over mix.
  8. Pour into a baking pan and bake for about 35 to 40 min.
  9. For the frosting: cream the cheese and add small amounts of sugar, continue beating. Add about 1/2 tsp vanilla extract. I don’t specify amounts of sugar and cream cheese because it really depends on the amount you want to use and the consistency you are looking for. That’s why I recommend to start with about 1/4 cup cheese and then add 1 tbsp at the time of sugar until you get the perfect icing for you.
  10. Let cake cool for about 10 mins in pan and then transfer it to a cooling rack. Cover cake with icing and sprinkle some ground nuts on top. Enjoy!!
