Banana peanut butter pancakes

Good morning!

Every time I write each post I get really hungry, because I usually make them a couple of days before I post it. So by the time its Friday I don’t have any. Today’s recipe is one of the easiest I have ever made, delicious and healthy. Great idea for breakfast, brunch or “just because” hahaha you know.

Ingredients

  • 2 ripe bananas (so they have more flavor)
  • 2 eggs
  • 2 tbsp peanut butter
  • 1 tsp chia seeds (optional)
  • 1 tsp baking powder

Directions

  1. Put all ingredients in a small bowl (you can use an electric beater in this case) or a blender.DSC_0096
  2. Mix until well incorporated.DSC_0097
  3. Heat a pan on medium-high temperature and cook each pancake on both sides to golden brown color. Flip the pancake when bubbles start to explode.DSC_0098DSC_0099DSC_0101
  4. This recipe yields about 8-10 pancakes, depending on the size you cook them. I got some baby sized at the end 🙂
  5. Serve hot with honey or syrup, fruit, nuts. As you prefer.  IMG_5323_editedDSC_0104_editedDSC_0130_edited

Have a great weekend!
