Dulce de Leche cake (Gluten free)

Its been two very long weeks since the last post, but here is a delicious and very easy recipe to compensate for that.

This  recipe can perfectly work with conventional wheat flour, but substituting it for different ones can have a high impact on texture, mouthfeel, flavor and color of our cake. For this recipe I used Chickpeas flour but you can use one of your preference.DSC_0050

Chickpeas flour

Ingredients

  • 150 g plain Greek yogurt
  • 2 1/2 tbsp chia seeds
  • 1 1/2 cup chickpeas flour
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup olive oil
  • 2/3 cup granulated sugar
  • 1/2 tsp vanilla extract
  • 3 eggs
  • 2 tsp cinnamon powder
  • 1 pinch ginger
  • 1 pinch nutmeg
  • 1 tbsp milk (the kind you prefer)
  • Dulce de leche
  • Flax seeds

Directions

  1. Preheat oven to 180 C or 350 F.
  2. Mix yogurt and chia seeds. Set aside.DSC_0051
  3. Mix flour, baking soda, salt, cinnamon, ginger and nutmeg in a medium bowl.DSC_0053
  4. In a large bowl, beat olive oil and sugar. Add eggs, one at the time and vanilla.
  5. Add dry ingredients in three batches alternating with yogurt. Add milk.DSC_0055
  6. Pour in cake pan and bake for about 40 minutes. I placed cake batter, then some drops of dulce de leche (here just add as much as you like) and then some flax seeds, cover again with the remaining batter and add some more dulce de leche and seeds. Do not over cook, because the result will be a hard and dry cake.
