Banana oatmeal muffin cup

Good morning!

This week has gone so fast, I honestly though yesterday was Monday.

One of the things I do a lot these days is scrolling down Instagram (I am sure I’m not the only one), between dog pictures, videos of puppies and babies, cake decorating and recipe. So I happen to go by an account @clean_and_delicious, where I found lots of amazing and interesting recipes. I just added a pinch more of spice and that was all. It was a very easy and interesting kind of muffin to try. It’s also on the healthier side because it doesn’t have added sugar, butter or flour.

Ingredients

 

  • 3 cups rolled oats
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • pinch of ground nutmeg
  • pinch of ground ginger
  • 1/2 tsp salt
  • 1 cup mashed bananas (the browner the better)
  • 2 eggs
  • 1 1/2 cup milk
  • For topping: Chocolate chunks and chopped almonds

Directions

  1. Preheat oven to 350 F/ 180 C and spray a muffin pan with some oil to avoid them to stick to the pan.
  2. In a big bowl, mix together all dry ingredients.
  3. In a smaller bowl, mix wet ingredients and then pour them into the dry mixture.
  4. Homogenize the mix and distribute in the muffin pan. 

  5. Top them with chocolate and nuts.dsc_0831dsc_0834
  6. Bake for 22-25 min or until done.

Cool completely in the pan and then transfer them to a storing container.dsc_0837

They have a slightly sweet flavor from the banana and also from the chocolate on top. I didn’t put that much chocolate to keep it healthy. I really think they do taste better when warm, so you can heat it before eating it.
