Oreo Cupcakes

Good morning and Happy (a little late) Thanksgiving! Hope everybody had a good time being with family and friends, two of the most important things to be thankful for. I know fall season is known for its delicious flavors, that is why I would like to apologize that this post is nothing related to that but is Super easy and fast to make! I actually made them for a birthday and they were great!

In this post there are not many pictures also, cause the day I made them didn’t have time to take as many as usual. And I’m also learning to use the new editor here. Lets start!

For the cupcakes:

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup butter at room temperature
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 and 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup Vanilla or natural Greek yogurt
  • 2/3 cup milk (whole or partially skimmed)
  • Crushed Oreo cookies (separated the cream from the cookie) about 1 cup

Instructions

  1. Preheat oven to 350 F and line muffin tin with cupcake liners.
  2. In a medium bowl combine flour, baking powder, baking soda and salt. Incorporate and set aside.
  3. In a mixing bowl, beat butter on medium speed for about 1 minute and then add the sugar. Beat them together on medium speed for about 2-3 mins until light and fluffy.
  4. Add vanilla extract and eggs one at a time.
  5. Add the yogurt.
  6. Slowly add 1/3 dry ingredients and 1/3 milk. Mix with a spatula or a hand whisker. Repeat until you have added all dry ingredients and milk. *Do not over mix the batter.
  7. Add ¾ of the crushed Oreo cookies and mix (I left a little bit of cookies so I could sprinkle on top of the frosting, but you don’t have to do that!).
  8. Put batter into the cupcake liners.
  9. Bake for about 14-16 mins.
  10. Once they are done, let them cool in the cupcake tin before moving them to a cooling rack.

For the frosting:

Ingredients

  • 2 sticks softened butter
  • 1 pint cold heavy cream
  • Cream from the cookies
  • 2-3 cups powdered sugar *if you want a firmer texture you probably need more than this
  • 1 tsp vanilla extract

You will also need some piping bags and decorating tips.

Instructions

  1. In a bowl beat butter and the cream from the cookies.
  2. Add powdered sugar a bit at a time (do it in low-medium speed or you and your kitchen will be covered in sugar)
  3. Add in heavy cream and vanilla extract. Mix until fluffy and forming soft peaks.

Now you are ready to decorate! put frosting in a piping bag and put your finishing touches. I sprinkled some crushed cookies on top.
