Good morning!!
Its Friday again. Is it just me o time is actually flying? Well, I don’t know.
Today’s recipe is the amazing red velvet but with more magic, and by magic I mean Marble!! Red velvet and vanilla, a great combination.
Ingredients
- 1 1/3 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup sugar
- 1/4 cup butter. room temperature
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- 1 tablespoon unsweetened cocoa powder
- 3/4 tsp red food coloring
Directions
- Pre heat oven to 350F/180C and line a 12 cup muffin tin with paper liners.
- In a medium bowl, whisk together flour, baking soda, baking powder and salt.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.

- With the mixer on low-speed, gradually incorporate one-third of the flour mixture followed by half of the buttermilk. Add another third of flour, the other half of the buttermilk and finally the last third of flour. Make sure everything is incorporated and you don’t have big lumps.

- Transfer 1 cup of the mixture to another bowl. Add cocoa powder and red food coloring.
- Divide batter evenly in the muffin cups as you better prefer. Swirl each muffin gently with a butter knife or toothpick.
- Bake for 18 – 20 minutes. When done, take them to a cooling rack to cool.
