Good morning and Happy Friday!
I missed you last Friday (sorry, got too many things to do) but here we are again. A chocolate something that can cheer people up and also it has incorporated avocado (super new for me).
This recipe is a Tasty recipe (tasty.co) with a little bit of changes to personalize it the way I prefer it. It’s very easy, dairy free, gluten-free and has just 7 simple ingredients. It is also a healthier version, since your are not adding more oil or more sugar. The texture reminded me more to a cake but it is delicious. Lets start:
Ingredients

- 1 ripe avocado
- 2 eggs
- 1/2 cup honey
- 1 teaspoon vanilla extract
- 2/3 cup gluten-free flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- Dash of salt
- 2 teaspoon mixed seeds
Directions
- Preheat oven at 350F/175C.
- Using a blender or food processor, combine avocado, eggs, honey and vanilla extract. Blend until smooth, scrapping down the sides as necessary. Make sure you don’t have big chunks of avocado at the end.
- In a large bowl, whisk the flour, cocoa powder and baking powder.
- Combine wet and dry ingredients.
- Pour batter in a greased pan (you can cover it also with parchment paper) and sprinkle seeds on top.
- Bake for 20-30 minutes (I baked mine 27 minutes). Allow to cool and enjoy!
