The second half of the year! Oh God!
Today’s recipe is very easy and doesn’t take too much time (it’s also delicious). Here is what we need:
Ingredients
- 1 cup raisins
- 3/4 cup unsalted butter at room temperature (170 g)
- 1 cup lightly packed brown sugar
- 1 egg
- 1 1/2 tsp vanilla extract
- 3/4 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 3 cups rolled oats
- 1 tbsp flax-seed
- 1 tsp chia seeds
Directions
- Add some hot water to the raisins and set aside.

- Preheat oven to 350 F or 180 C.
- In a medium bowl, mix flour, baking soda, salt, cinnamon, nutmeg and oats. Set aside.
- Beat brown sugar and butter until smooth and creamy.

- Add egg and vanilla extract. Beat to incorporate.

- Add slowly the dry ingredients to the wet, and mix with a hand mixer.

- Drain the raisins and add them to the batter. Mix with a spatula.

- Cover a cookie tray with parchment paper and place a 2 tbsp size ball for each cookie, 2 inches apart, flat them a but with your hand or a spoon. Sprinkle some chia seeds and flax seeds on top of each cookie before going into the oven (This recipe yields 14-16 cookies, using a 2 tbsp size).
- Bake them for 10-12 minutes. They will look golden brown on the edges and soft in the center. Remove from the oven, leave them rest for a couple of minutes on the tray before transferring them to a cooling rack.
