Oatmeal & raisin cookies

Good morning!!

The second half of the year! Oh God!

Today’s recipe is very easy and doesn’t take too much time (it’s also delicious). Here is what we need:

  • 1 cup raisins
  • 3/4 cup unsalted butter at room temperature (170 g)
  • 1 cup lightly packed brown sugar
  • 1 egg
  • 1 1/2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 3 cups rolled oats
  • 1 tbsp flax-seed
  • 1 tsp chia seeds

Directions

  1. Add some hot water to the raisins and set aside.DSC_0904
  2. Preheat oven to 350 F or 180 C.
  3. In a medium bowl, mix flour, baking soda, salt, cinnamon, nutmeg and oats. Set aside.
  4. Beat brown sugar and butter until smooth and creamy.DSC_0901
  5. Add egg and vanilla extract. Beat to incorporate.DSC_0902
  6. Add slowly the  dry ingredients to the wet, and mix with a hand mixer. DSC_0906
  7. Drain the raisins and add them to the batter. Mix with a spatula.DSC_0907
  8. Cover a cookie tray with parchment paper and place a 2 tbsp size ball for each cookie, 2 inches apart, flat them a but with your hand or a spoon. Sprinkle some chia seeds and flax seeds on top of each cookie before going into the oven (This recipe yields 14-16 cookies, using a 2 tbsp size). 

  9. Bake them for 10-12 minutes. They will look golden brown on the edges and soft in the center. Remove from the oven, leave them rest for a couple of minutes on the tray before transferring them to a cooling rack. DSC_0911_editedDSC_0913_edited
