Cinnamon “churro wannabe” muffin

Happy Friday and welcome to the weekend!

You might be wondering why the weird name of the recipe, but I really tried to come up with a good name but that one was the only one I could figure out (need to work on my imagination haha) and the “churro wannabe” makes reference to the more compact texture and sugar/cinnamon final cover. So, this is a really easy one and great idea to bring to brunch or as a dessert, plus your kitchen will smell really good after all the cinnamon.

  • 1 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white granulated sugar separated (1/4 and 1/4)
  • 1/4 cup brown sugar
  • 6 tablespoons melted butter
  • 1 tablespoon + 1 1/8 teaspoon cinnamon (divided)
  • 1 egg, lightly beaten
  • 1/2 cup milk

Directions

  1. Pre heat oven to 350 F / 180 C and prepare a muffin tin (you can grease it or put some paper liners)
  2. In a large bowl mix flour, baking powder, salt and 1 tablespoon cinnamon. DSC_0788
  3. Add brown sugar, 1/4 cup white granulated sugar and whisk to combine.DSC_0789
  4. Add egg, milk and 4 tablespoons butter, and stir to incorporate all ingredients.DSC_0791
  5. Divide the batter into 12 portions.
  6. Bake for about 11-12 minutes or until a toothpick inserted comes out clean.
  7. Let them cool in the pan for 5 minutes or so before removing then.DSC_0794
  8. Mix the 1/4 granulated sugar with 1 1/8 teaspoon cinnamon. With a small brush (or a spoon) put some of the remaining melted butter on the surface of each muffin and sprinkle some of the sugar-cinnamon mix. If you didn’t use paper liners, you can roll the muffin in the butter and then in the sugar mix. DSC_0796
