Chocolate chip cookies

Hello! Friday is finally here and I hope you have had a productive week.

I think there is no person I have ever met that doesn’t like chocolate chip cookies, maybe because I’m mostly around people who likes chocolate. Anyway, friends were commenting a lot about making chocolate chip cookies so here are the ones I love (my mom also loves them and that can be not representative cause she likes everything I do, you know… a mom-daughter thing haha)

I actually cut my original recipe in half cause I did not want to make that many cookies. In case you need more, just double or triplicate the recipe and if you don’t plan to bake it all, you can perfectly freeze part of it and bake them later. Hope you like and try sometime this recipe.

  • 1/2 cup packed brown sugar
  • 1/8 cup white sugar
  • 1/2 cup shortening
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cup flour + 2 tablespoons (separate)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup chocolate chips

Directions

  1. Preheat oven to 350 F / 180 C.
  2. Mix 1 1/4 cup flour, baking soda and salt, set aside.
  3. In a medium bowl, mix white and brown sugar, shortening, egg and vanilla together until well combined.DSC_0570
  4. Add the flour mixture and incorporate. Add the remaining flour (if necessary add a little more until the batter is sticky).
  5. Fold in the chocolate chips.DSC_0572
  6. Lay parchment paper on a cookie tray and depending on the size you want them, make balls and place them about 2 inches apart. Flatten them a bit with your hand or using a spoon. I used a tablespoon size for my cookies and got 15 cookies out of it.DSC_0573
  7. Bake for about 8-10 minutes. Do not over bake, if you do your cookies will be harder and drier.
  8. Take out and let them sit for a couple of minutes on the cookie tray before transferring them to a cooling tray.
