Blueberry muffins

Hello! Good morning everyone!

Hope every body has had a great and productive week. Today’s recipe is delicious blueberry muffins! perfect for any occasion (birthday parties, dessert, snacks or take them to a picnic, as I did).

It is a very easy recipe, takes about 30 or 35 minutes in total, and yields 12 muffins (if you use a 12 cupcake tin, if you use a larger one probably you will get less units. So lets start!

Ingredients

  • 1 1/2 cups (195 grams) all-purpose flour
  • 3/4 cup (150 grams) granulated sugar, plus 1 tablespoon for muffin tops (this last one is optional)
  • 1/2 tsp cinnamon (optional)
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup (80 ml) vegetable oil
  • 1 large egg
  • 1/3 – 1/2 cup (80 ml – 120 ml) milk; dairy and non-dairy as you prefer
  • 1 1/2 teaspoons vanilla extract
  • 6 to 8 ounces fresh or frozen blueberries

Directions

  1. Pre heat oven to 400 degrees F and line muffin cups, depending if you’re trying to make big-topped muffins, standard-size muffins or mini muffins.
  2. Whisk the flour, sugar (3/4 cups), baking powder, and salt in a large bowl.

  3. Add oil to a measuring jug that holds at least 1 cup. Add the egg then fill the jug to the 1-cup line with milk (1/3 to 1/2 cup milk). Add vanilla and whisk to combine.DSC_0363
  4. Add milk mixture to the bowl with dry ingredients and combine (using a fork). Do not over mix. (The muffin batter will be quite thick). Fold in the blueberries. DSC_0364 1
  5. Divide the batter between muffin cups.
  6. Mix sugar and cinnamon and sprinkle some on top of each muffin, to add a final touch (you can skip this step if you want).
  7. Bake muffins 15 to 20 minutes or until tops are no longer wet and a toothpick inserted into the middle of a muffin comes out with crumbs, not wet batter. Transfer to a cooling rack.

To store, place them in a plastic bag, seal, and store at room temperature for 2 to 3 days. To freeze, wrap them tightly in aluminum foil or place them in freezer bags. Freeze for up to 3 months, but they are surely better fresh.
