Banana oats Muffins

Good morning! It’s finally Friday!

Hope its been a good week for everybody. 

I was thinking I wanted to make something with bananas (cause I had some very ripe ones at home) so I asked some of my friends and they gave me a couple of ideas. So here are: my very first banana oats muffins! They are easy and fast to make, hope you like them! This recipe yields 12 muffins.DSC_0106 1

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup oats
  • 1/2 cup sugar (or a little less)
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 egg
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 1/2 tsp vanilla extract
  • 1 cup mashed ripe bananas
  • Cinnamon, to taste (optional)

Directions

  1. Combine flour, oats, sugar, baking powder, baking soda and salt.DSC_0116
  2. In a large bowl, beat the egg and then stir in the milk, oil and vanilla.DSC_0115
  3. Add the mashed banana mixture until just combined.
  4. Line up a 12 muffin tin with baking liners and divide the batter. Bake at 400 F or 205 C for 18-20 minutes.DSC_0117 1

⇒ Check them at 17 minutes or so, to see if they are done. Do not worry if they come out a little more tan.

I decided to use this paper liners that are larger than the normal ones just to make the muffins look different, but you can easily use any kind you would like. Enjoy!DSC_0108_edited
