Happy Friday people! April has finally arrived and I can’t be happier.
Please don’t say… Pancakes, again? really? I hope you are not bored yet, and promise I am going to bring more different things (is just that I love pancakes) in the upcoming posts.
This recipe is super similar to the carrot pancakes one, and I just wanted to try if the zucchini ones were as good as the carrot ones (and they were!!) So here is what we need:
Ingredients
- 1 cup all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
- dash of ginger (powder)
- dash of nutmeg
- 1 tbsp sugar
- 1/3 cup grated zucchini

- 1 tbsp vegetable oil
- 1 cup milk
- 1 beaten egg
Directions
- First of all, mix all the dry ingredients in a bowl. This will help to avoid creating clumps of certain ingredients once you add the wet ones.
- Add milk, oil, egg and mix in until smooth.
- Add zucchini at last and mix well.

- Cook pancakes on a greased hot pan. Turn it when bubbles start to plop on the surface and also when they are as golden as you like.

For having a regular size pancake, you can use a 1/4 or 1/3 cup measure. Also remember that you can add more cinnamon, ginger and nutmeg if you would like.
