Happy Friday everyone!
Today is the last Friday of march, and I think is a holiday is many places. For today’s recipe I got the help of two of my friends, they were wanting to do something with chocolate and decided to do these muffins, that are really easy to make.
So here is what we need:
Ingredients
- 6 tbsp of butter
- 4 oz bittersweet chocolate, chopped

- 2 cups all-purpose flour
- 2/3 cup granulated sugar
- 1/3 cup unsweetened cocoa powder
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/4 cups buttermilk
- 1 egg
- 1 tsp vanilla extract
Directions
- In a large bowl, mix all dry ingredients (flour, sugar, cocoa powder, baking powder, baking soda and salt)
- Melt butter and chocolate together (you can melt half of the chocolate and then add the remaining chocolate to the mix)
- In another bowl, mix buttermilk, egg and vanilla together.
- Pour liquid ingredients and melted chocolate into the dry ingredients.

- Gently blend everything together. Do not over-mix the batter.

- Pour the batter into muffin cups and bake for approximately 17-20 minutes on 375 F.
Now it’s time to enjoy them! You can add some ice cream (I would prefer vanilla flavored but combine as you want)

NOTE: These desserts are for occasional intake. Remember to include fruits and vegetables in your daily diet and stay active!
Have you tried preparing desserts or cooking with your friends recently? If not, I highly recommend you to do so. It’s a great therapy, you guys will spend some quality time chatting and experimenting with food, and most important, sharing good moments and creating memories. Have a great weekend!
