Cinnamon roll pancakes

Good morning!!! Today’s post is earlier than any other day, but I was not going to be able to post it later. SO….. As I have mentioned before, I love pancakes!!! So here is one of my favorite recipes of all times (Its my moms favorite also).

Ingredients

Cinnamon filling

  • 4 tbsp (1/2 stick) unsalted butter
  • 1/4 cup + 2 tbsp brown sugar
  • 1/2 tbsp ground cinnamon

Pancakes

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1 large egg
  • 1 tbsp vegetable oil

Cream cheese glaze

  • 4 tbsp (1/2 stick) unsalted butter
  • 2 ounces cream cheese, at room temperature
  • 3/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

Cinnamon filling

  1. The very first thing I make sure is that the butter is room temperature, so it wont take too long to melt in the microwave.
  2. Once is melted, mix with the brown sugar and cinnamon (you can add more cinnamon if you would like).
  3. Set aside.

Pancakes

  1. Mix all dry ingredients in a bowl
  2. Add milk, oil and the egg.image1 - Copy (2)
  3. Do not over mix it.
  4. Once is ready to be cooked, on a heated pan, pour a 1/4 cup measure of pancake mix, and when little bubbles start to pop up, pour some of the cinnamon filling (as much as you would like, just make sure you have enough for all the pancakes)image2 - Copy (2)
  5. Check the bottom to see the color and turn to cook the other side.image3 - Copy (2)
  6. Clean the excess of caramel after each pancake, cause it will burn and smell bad (and will be harder to clean after you are done cooking)
  7. Repeat until done.

Cream cheese filling

  1. In a pan, heat the butter until melted.
  2. Remove from heat and add the cream cheese.
  3. Mix until smooth.
  4. Add the sugar little by little
  5. Pour the vanilla extract.

I usually keep the cream cheese filling a little warm so it will pour easier. Now it is ready for you to enjoy! Serve with fruits or just with the glaze on top.image1 - Copy (3)_edited

Remember to include fruit on your every day diet and to practice some physical activity at least three times a week!

NOTE: Please be careful when removing the extra cinnamon filling from the pan after each pancake, because is very hot and you can burn yourself (I did).
