Vegan Chocolate cake

Good morning! I love Fridays, and I am sure most of the people do. Today is a very different recipe of what I usually do. This is a vegan chocolate cake, it doesn’t include animal derived ingredients (milk, eggs or butter) in case you want to try something different or trying to change your dietary habits. I personally find it very useful for when I want to eat something sweet but do not have milk or eggs at home.

  • 1 1/2 Cups all-purpose flour
  • 3 Tbsp. cocoa (unsweetened)
  • 1 Cup white sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 tsp. white vinegar
  • 1 tsp. pure vanilla extract
  • 5 Tbsp. vegetable oil (canola, olive..)
  • 1 Cup water

Directions

  1. Preheat oven to 350 F.
  2. Mix first 5 dry ingredients. You can do this directly in the baking pan – squared 8″ square – or in another bowl. I used a rectangular pan for baking.
  3. Pour vinegar, vanilla and the vegetable oil in the dry ingredients and mix.
  4. Pour water over all. Mix well until smooth.DSC_0423
  5. Bake on middle rack for 35 minutes. Check with toothpick to make sure it comes out clean.
  6. Cool completely and top with your favorite frosting. Enjoy!dsc_0424_edited.jpg

Note: Oven cooking times may vary, be sure to check your cake to make sure you do not over bake or burn the cake.

**You can double this recipe, just use a 9×13 baking pan. You can also make cupcakes – just be sure to adjust the baking time.
