Good morning! I love Fridays, and I am sure most of the people do. Today is a very different recipe of what I usually do. This is a vegan chocolate cake, it doesn’t include animal derived ingredients (milk, eggs or butter) in case you want to try something different or trying to change your dietary habits. I personally find it very useful for when I want to eat something sweet but do not have milk or eggs at home.

Ingredients
- 1 1/2 Cups all-purpose flour
- 3 Tbsp. cocoa (unsweetened)
- 1 Cup white sugar
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. white vinegar
- 1 tsp. pure vanilla extract
- 5 Tbsp. vegetable oil (canola, olive..)
- 1 Cup water
Directions
- Preheat oven to 350 F.
- Mix first 5 dry ingredients. You can do this directly in the baking pan – squared 8″ square – or in another bowl. I used a rectangular pan for baking.
- Pour vinegar, vanilla and the vegetable oil in the dry ingredients and mix.
- Pour water over all. Mix well until smooth.

- Bake on middle rack for 35 minutes. Check with toothpick to make sure it comes out clean.
- Cool completely and top with your favorite frosting. Enjoy!

Note: Oven cooking times may vary, be sure to check your cake to make sure you do not over bake or burn the cake.
**You can double this recipe, just use a 9×13 baking pan. You can also make cupcakes – just be sure to adjust the baking time.
