Good morning!
It’s the last Friday of February and I feel time is flying!
Usually I have more time to cook on the weekends because I don’t have to run to go to classes, so I let my imagination do things in the kitchen. I am sure everybody has seen this breakfast style all over the internet, and I always wanted to try it. So I did!
It’s also not a heavy breakfast, around 430-450 Kcal (not counting the coffee), It may vary according to the kind of bread you use, and amount of oil you use to fry the egg. Or if you use bigger portion sizes.
Ingredients:
- 1 medium egg
- 1 tsp olive oil (to fry the egg)
- dash of salt and pepper
- 2 slices of Whole wheat and rye bread
- 1/2 tomato
- 4-5 spinach leaves (add as much as you would like)
- 1/3 small avocado*
- 1 orange or another piece of fruit you prefer
*Here is a picture of what I am calling a small avocado, compared to my fingers

Instructions:
- Cut the shape you like on the bread

- Heat a frying pan and add a little bit of oil.
- Put the bread and heat each side for a few seconds.

- Add the rest of oil and then the egg, salt and pepper. Make sure your pan is not so hot to burn the egg and the bread. Cook it as long as its better for you, I cooked it soft. when done, remove with a spatula.
- Make sure you wash your vegetables before eating them.
- Cut tomato and Avocado.
- Serve and enjoy!

It was super easy and fast to make, and It gave a whole new look to my breakfast. A great start for the day!
Remember to include fruits, vegetables and whole grain products to your daily diet!
