Good morning! Its Friday and a beautiful day! We are alive, we have people who loves us, a home and a whole new day to be the best we can!
I wanted to give something special to my friends on valentine’s day, something funny but eatable, so I decided to make some rainbow cupcakes. They are easy to make and depending on how many colors you mix you will have and amazing result. Here is how I made them.
I did not make any frosting this time, but i will share the icing recipe I have used before and how they looked!
Ingredients

- 1 cup granulated sugar
- 1/2 cup butter (1 stick=115 grams) at room temperature
- 2 large eggs
- 2 tsp vanilla extract
- 1 and 3/4 cups all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 cup Vanilla or natural Greek yogurt
- 2/3 cup milk (whole or partially skimmed)
- Food color (red, green, blue, purple, green… the ones you prefer)
Instructions
- Preheat oven to 350 F and line muffin tin with cupcake liners.
- In a medium bowl combine flour, baking powder, baking soda and salt. Incorporate and set aside.

- In a mixing bowl, beat butter on medium speed for about 1 minute and then add the sugar. Beat them together on medium speed for about 2-3 mins until light and fluffy.
- Add vanilla extract and eggs one at a time.
- Add the yogurt.
- Slowly add 1/3 dry ingredients and 1/3 milk. Mix with a spatula or a hand whisker. Repeat until you have added all dry ingredients and milk. *Do not over mix the batter or you will lose a lot of air from the mix and it will come out like a heavy cake, not very fluffy and spongy.
- Separate batter in small bowls and add color.

- Put batter into the cupcake liners.

- Bake for about 14-16 mins.
- Once they are done, let them cool in the cupcake tin before moving them to a cooling rack.

For the frosting, I like this recipe with cream cheese. This time i did not frost them, but I have done it before, here is how they looked:

Ingredients
- 8 ounces cold cream cheese
- 1 pint cold heavy cream
- 1 and 1/2 cup powdered sugar *if you want a more firm texture you probably need more than this
- 1 tsp vanilla extract
- Food color – as many as you would like – (I always recommend gel food color, cause it won’t make the frosting runny and you don’t need that much color to get the tone you want because is more concentrated).
You will also need some piping bags and decorating tips.
Instructions
- In a bowl beat the cream cheese for about a minute.
- Add powdered sugar a bit at a time (do it in low-medium speed or you and your kitchen will be covered in sugar)
- Add in heavy cream and vanilla extract. Mix until fluffy and forming soft peaks.
- Add color, put it in a piping bag and now you are ready to decorate them!
As the frosting has a lot of sugar, if you leave it uncovered if will form a crust and crystals which you don’t want on your cupcakes, so if you are not using it or have some left, cover it with some film.
