Nut Pancakes

Here is a great idea to start the weekend in a delicious way, nut pancakes!! These pancakes can be made with whole wheat or normal flour, and a touch of nuts to give it a crunchy texture. Enjoy the extra protein, healthy fats, vitamins and minerals and of course the great flavor you get from adding nuts to your breakfast!

Total Time preparation about 25 minutes

Servings 8 medium pancakes (if used a 1/3 cup to make them).

Ingredients

  • 1 1/3 cup all-purpose flour (or whole wheat flour)DSC_0904_edited
  • 1/4 cup sugar
  • 1 1/3 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 medium eggs (separated yolks and whites)
  • 1 cup milk (whole or skimmed) at room temperature
  • 1/4 cup unsalted butter – melted, plus a bit more for cooking the pancakes or you can use oil for cooking also.
  • 1 teaspoon vanilla extract
  • 1/3 cup chopped nuts (almonds, pecans, hazelnuts), plus extra for topping
  • maple syrup or honey – for serving

 

Instructions

  1. In a medium bowl, mix together the flour, sugar, baking powder and salt.DSC_0902_edited_LI
  2. In a separate bowl, beat together the egg yolks, milk, butter and vanilla extract.DSC_0905_edited_LI
  3. Pour the egg yolk mixture into the dry mixture, and mix until well incorporated. Add nuts and mix well.
  4. In a separate bowl, beat the egg whites using an electric mixer on medium-low speed (you can do it by hand but it will take you a while and your arm will hurt) until soft peaks form or the foam keeps it form, the egg whites should hold their peaks just for a second or so before falling back into themselves).DSC_0910
  5. Fold the egg whites into the batter and be careful to not over mix it (this way we don’t lose the air and fluffiness we put in our pancakes). Do not worry if there are chunks of egg white foam in the batter.DSC_0911_edited
  6. Add on a little bit of butter or oil to coat the pan. Drop on the pancake batter 1/3 cup at a time. When you see bubbles start to pop on the surface of the pancake, gently lift up to check the bottom of the pancake to see if it is golden/brownish as you like and crispy on the edges. When is ready and the color you want, flip it over and continue cooking the pancake until it is golden on both sides.

Now they are ready be enjoyed! I like to serve them with some more nuts, chia seeds and honey, but is up to you to experiment with flavors and textures, adding some fruits and syrup.
